Weight Watcher Points - 3 Points
2 pink or red grapefruit 2 navel oranges
1/2 cup salad oil
1 teaspoon finely shredded lemon peel
1/4 cup lemon juice
2 teaspoons sugar
1 tablespoon Dijon-style mustard
1/4 teaspoon pepper
4 cups thinly sliced Belgian endive
4 cups torn escarole
1 small jicama, peeled and cut into matchsticks (about 2 cups)
Recipe
Peel and section grapefruit and oranges over a bowl; reserve any juices. For dressing, in a screw-top jar combine reserved fruit juices, salad oil, lemon peel, lemon juice, sugar, mustard, and pepper. Cover; shake well. 3. Place greens on a large serving plate. Arrange fruit and jicama atop greens. Drizzle dressing over top. Serve immediately. Makes 10 side-dish servings.
