Recipe Introduction
A memory from my sister Louise:
One food I would gobble up was her cucumber sandwiches. I first remember helping to make these delights when I was around 20 years old and we would have our wonderful Christmas Eve celebrations on Stevenson Blvd. We would have cocktails and hors d'oeuvres starting in the early evening. One of the many hors d'oeuvres she would make would be little cucumber sandwiches on tiny rye bread. So good. Brings back memories.
Those Christmas Eves would go on well into the pre-dawn hours, after a long, happy present-opening event that was very well orchestrated, not by Mom, she was probably in the kitchen during the planning stages of this, but by one of us girls who wanted it to be perfect! Many Christmas Eves, after all this celebrating, we would all kind of mellow out. But not Mom. She would whip up a full course breakfast with bacon, eggs, juice, coffee and an assortment of her wonderful breads!
List of Ingredients
1 or 2 loaves of small party Rye Bread
Mayonnaise
2 or 3 cucumbersRecipe
Slice cukes.
Spread bread with mayonnaise.
Put slice of cuke on bread.
Salt and pepper to taste.
Cover with another slice of bread spread with mayo.
That's it! Simple but good.
