~ A Thanksgiving morning tradition! ~
List of Ingredients
2 cups flour
1 cup sugar
1/2 tsp. baking soda
1 tsp. salt
1-1/2 tsp. baking powder
1/4 cup shortening
3/4 cup orange juice
1 Tb. grated orange rind
1 egg, well beaten
1/2 cup chopped nuts
2 cups cranberries, choppedRecipe
Sift together flour, sugar, baking powder, salt and baking soda.
Cut in shortening until mixture resembles coarse cornmeal.
Combine orange juice and orange rind with egg.
Pour into dry ingredients, mixing just enough to dampen.
Fold in chopped nuts and cranberries.
Spoon into greased loaf pan (9 x 5 x 3).
Spread corners and sides slightly higher than center.
Bake at 350 degrees about 1 hour, until crust is golden brown.
Cool. Cut into slices and serve.
