Recipe Introduction
Mom's "gift" to us every Christmas!
List of Ingredients
1 cup shortening
2 cups brown sugar
3 eggs
4 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
Filling:
2 1/2 cups pitted dates, cut in small pieces
1 cup sugar
1 cup water
1 cup walnuts, chopped fineRecipe
Place dates, sugar, water and walnuts
in small saucepan and cook for 10 minutes,
till thick and mushy.
Cream together shortening and brown sugar till light and fluffy.
Add eggs and beat well.
Add vanilla.
Sift together flour, salt and baking soda
and add to above creamed mixture.
Chill dough until firm.
Roll out on wax paper in long narrow rectangle.
Spread filling on top and then roll from
long side to make one long log.
(You may get two or three logs depending
on how long you make each one.)
Chill overnight.
Cut into 1/4" slices.
Bake at 400 degrees for 10-12 minutes.

I remember when Andrew, Liz, Emily
and I would go upstairs to help with
the Christmas decorations and Grandma
would be making all her cookies and breads.
She would always offer us a cookie
(or 2 or 3 or . . . ), ONCE THEY WERE COOLED.
I remember the Pinwheel ones best because
they were my favorite and they
just looked really cool.
