    1 Tb. oil
    1 lb. boneless, skinless chicken breasts,
    cut into strips
    2 cups broccoli flowerets
    1 medium red pepper, cut into thin strips
    1 can (8 oz.) sliced water chestnuts, drained
    1 1/2 cups chicken broth
    2 Tbs. soy sauce
    2 Tbs. cornstarch
    1 tsp. garlic powder
    3/4 tsp. ground ginger
    2 cups Minute Rice, uncooked

    Recipe



    Heat oil in large skillet on medium heat.
    Add chicken and cook until browned.
    Add broccoli, red pepper and water chestnuts
    and cook and stir until tender-crisp.

    Mix broth, soy sauce, cornstarch, garlic powder
    and ginger and stir into chicken mixture.
    Bring to boil. Boil 1 minute.

    Prepare rice as directed on package,
    omitting margarine and salt.
    Serve chicken and vegetables over rice.

    Makes 4 servings.
