Recipe Introduction
A simple French-Canadian casserole that is certainly one of the favorites of so many in our family. There was never a time when I did not LOVE having Mom make this for supper. I now make it every so often and wonder....each time...why I don't make it more often than I do! The blending of the beef, mashed potatoes and creamed corn is just plain delectable.
Legend has it that when the Canadian railroad was being built, this inexpensive meal was concocted to feed the many Chinese workers who were helping to build the railroad. Thus the name, Chinese Pie or Paté Chinois.
List of Ingredients
1 lb. ground beef
1 small onion, diced small (optional)
4 to 6 large potatoes, depending on size
1 can creamed style corn
Salt and pepper to tasteRecipe
Peel and cut potatoes and cook till done.
Mash or whip potatoes. Add salt and pepper to taste.
Do not add milk, as potatoes will become
too soupy in the casserole.
Saute onion in butter or oil till transparent.
(Adding onion is optional.)
Brown the beef with the onions.
Add salt and pepper to taste.
Place drained beef mixture in bottom of casserole.
Spread the can of creamed corn on top of ground beef.
Spoon potatoes onto top of corn.
Dot potatoes with pats of butter.
Bake at 350 degrees for 20 to 30 minutes
or until the peaks of potatoes are lightly browned.
Serves 4.
