Welsh Rarebit

List of Ingredients
2 Tb. flour
2 Tb. butter
1 cup milk
1 level tsp. dry mustard
1 Tb. Worcestershire sauce
Dash cayenne pepper
1/2 lb. cheddar cheese, coarsely grated
or broken into small pieces.
Recipe
Melt butter in top of double boiler.
Add mustard and mix.
Gradually add milk, stirring until it thickens.
Add Worcestershire and cayenne.
Add cheese and stir until melted.
Serve on toast or English muffins.
Serves 4.
Note:
I recall Mom making this when we were young. Though I loved eating it, I always wondered about the rabbit and thought it was a really weird name to give a dish made out of cheese. Of course I realize now that Mom and Dad would say the name of this dish with a Boston accent...so it sounded like rabbit to me!
