2 (16 ounce) cans sweet potatoes in heavy syrup
1/2 cup firmly packed light brown sugar
2 Tb butter or margarine
1/2 tsp. grated orange rind
1/4 tsp. cinnamonRecipe
Drain sweet potatoes, reserving 1/4 cup of the syrup.
In large skillet, heat brown sugar, butter, orange rind,
cinnamon and reserved syrup to boiling.
Reduce heat and simmer until slightly thickened,
about 1 minute.
Add sweet potatoes.
Heat thoroughly, gently stirring to coat potatoes with glaze.
Makes 6 servings.
