    6 cups sliced squash, yellow or zucchini.
    (Peeled or unpeeled, depending on your preference.)
    1/4 cup chopped onion
    1 can Cream of Mushroom soup or Cream of Chicken soup
    1 cup dairy sour cream
    1 cup shredded carrots
    1 pkg. (6-8 oz.) Stove Top Herb Stuffing Mix
    1/2 cup butter or margarine

    Recipe



    Cook squash and onion in water (covered) for approx. 5 min., after water reaches a low boil or until tender.
    Drain thoroughly.

    Combine condensed soup, sour cream and carrots.
    Add drained squash mixture.

    Melt butter or margarine in a skillet.
    Add stuffing mix.

    Place half of mix in bottom of 13" x 9" baking dish.
    Cover with squash mixture, then top with remaining stuffing mix.

    Bake in preheated 350 degree oven for 25 - 30 min.
