    6 ounces lean ground beef*
    2 1/2 cup Basic Italian Sauce**
    1 1/2 cups ricotta cheese
    1 cup chopped fresh spinach***
    1/3 cup Parmesan cheese -- grated
    1 tablespoon fresh basil**** -- snipped
    1/4 teaspoon pepper
    1/4 teaspoon ground nutmeg
    9 lasagna noodles
    1 1/4 cups hot water (140 degrees F)
    1 cup mozzarella***** -- shredded

    * or ground pork, or ground sausage
    ** or 27- to 30-ounce jar meatless spaghetti sauce
    *** or 1/2 of a 10-ounce package frozen chopped spinach, thawed and drained
    **** or 1 teaspoon dried basil, crushed
    ***** or provolone cheese (4 ounces)

    Recipe



    In a medium saucepan cook ground meat until brown. Drain off any fat. Add thawed Basic Italian Sauce. In a medium bowl stir together the ricotta cheese, spinach, Parmesan, basil, pepper, and nutmeg.

    Lightly grease a 2-quart rectangular baking dish. Place 3 of the uncooked noodles on the bottom of the dish. Spoon one-third of the meat sauce over the noodles. Top with half of the spinach mixture and 3 more uncooked noodles. Spoon another third of the meat sauce over the second layer of noodles; top with remaining spinach mixture. Place the last 3 noodles on and spoon remaining meat on top.

    Slowly pour hot water into dish around the edges. cover dish tightly with foil and bake in a 375 degree F oven for 40 minutes. Uncover and sprinkle with mozzarella or provolone cheese. Bake, uncovered, about 15 minutes more
    or until noodles are tender and casserole is bubbly around the edges. Let stand for 10 minutes. Cut into squares to serve. Makes 6 to 8 servings.

    NOTES: Prepare this spinach and basil spiked lasagna with ground beef, ground pork or pork sausage.
