    Best served while still warm. A nice addition to a brunch menu. Makes 12 muffins.


    List of Ingredients


    • 1 3/4 c. all-purpose flour
    • 1 1/2 tsp. baking powder
    • 1/2 tsp. salt
    • 1/2 tsp. ground nutmeg
    • 1/4 tsp. ground cinnamon
    • 3/4 c. granulated sugar
    • 1 egg
    • 3/4 c. milk
    • 1/3 c. vegetable oil
    • 1 tsp. ground cinnamon
    • 3/4 c. granulated sugar
    • 1 stick butter, melted


    Instructions


    1. Preheat oven to 350. Spray muffin cups with vegetable spray.
    2. In large bowl, combine flour, baking powder, salt, 1/4 teaspoon cinnamon, nutmeg and 3/4 cup sugar.
    3. In small bowl, mix egg, milk and oil.
    4. Add egg mixture to flour mixture and stir just until combined.
    5. Place batter in greased muffin cups and bake for 20 - 25 minutes.
    6. Remove muffins from oven. Combine 1 teaspoon cinnamon and remaining sugar in a small bowl.
    7. Gently roll muffin tops in melted butter, then in cinnamon sugar.
    8. Enjoy.
