Pork Chops with Sweet Curried Onion

Goes well with an apple and celery salad.
List of Ingredients
- 1/4 cup water
- 1 tablespoon apricot jam or chutney
- 1 large red onion
- 1 1/2 tablespoons vegetable oil
- 1 1/2 teaspoons curry powder, or to taste
- four 1/2 inch thick bone - in pork chops
- salt and pepper to taste
Instructions
- In a small bowl, stir together water and jam.
- Cut onion in half and slice thinly.
- Heat one tablespoon oil in non-stick skillet over moderate heat until hot but not smoking. Cook onion and curry powder, stirring frequently, until onion is softened.
- Stir onions into jam mixture and season with salt and pepper.
- Pat pork chops dry and season with salt and pepper. Heat remaining oil in skillet over moderately high heat until hot but not smoking. Saute chops until golden brown and cooked through, about three minutes per side.
- Add curried onion to pan and heat through, stirring frequently. A small amount of water, about 1/4 cup, may be added if mixture is too thick, and then cook to desired consistency.
