Chicken Pie with Poured Crust

- 1 quart chicken broth or water
- 6 boneless, skinless chicken breast halves
- 1 package (10 ounces) mixed frozen vegetables of choice, not thawed
- 1 can cream of chicken soup , regular or fat free
- 2 ounces chicken broth or water
- 1 teaspoon Italian seasoning, optional
- Salt and pepper to taste
- Poured crust:
- 1 cup self-rising flour
- 1 teaspoon baking powder
- 1 cup milk
- 1 stick butter or margarine, melted
- Vegetable spray
Instructions
- Preheat oven to 325. Spray 2 quart casserole dish with vegetable spray.
- Place chicken in medium saucepan and add chicken broth or water. Bring to a boil, then reduce heat and simmer 20 - 25 minutes or until cooked through.
- Remove chicken from liquid and allow to cool. Cut into 1/2" cubes.
- In large mixing bowl, mix chicken, frozen vegetables, undiluted soup, broth or water and seasonings.
- In medium bowl, combine self-rising flour, baking powder, milk and melted butter or margarine.
- Pour chicken mixture into greased casserole dish, then pour crust mixture over chicken.
- Bake about one hour or until crust is lightly browned.
