    Chicken Pie with Poured Crust

    List of Ingredients


    • 1 quart chicken broth or water
    • 6 boneless, skinless chicken breast halves
    • 1 package (10 ounces) mixed frozen vegetables of choice, not thawed
    • 1 can cream of chicken soup , regular or fat free
    • 2 ounces chicken broth or water
    • 1 teaspoon Italian seasoning, optional
    • Salt and pepper to taste
    • Poured crust:
    • 1 cup self-rising flour
    • 1 teaspoon baking powder
    • 1 cup milk
    • 1 stick butter or margarine, melted
    • Vegetable spray


    Instructions


    1. Preheat oven to 325. Spray 2 quart casserole dish with vegetable spray.

    2. Place chicken in medium saucepan and add chicken broth or water. Bring to a boil, then reduce heat and simmer 20 - 25 minutes or until cooked through.

    3. Remove chicken from liquid and allow to cool. Cut into 1/2" cubes.

    4. In large mixing bowl, mix chicken, frozen vegetables, undiluted soup, broth or water and seasonings.

    5. In medium bowl, combine self-rising flour, baking powder, milk and melted butter or margarine.

    6. Pour chicken mixture into greased casserole dish, then pour crust mixture over chicken.

    7. Bake about one hour or until crust is lightly browned.
