Colorful Vegetable Salad

Recipe Introduction
Serves a crowd. Can be refrigerated for several days if onions are removed.
List of Ingredients
- 6 cups broccoli florets
- 6 cups cauliflower florets
- 2 cups cherry tomatoes, halved
- 1 large red onion, thinly sliced
- 1 6 ounce can pitted ripe olives, drained and sliced
- 1 envelope ranch-style dressing mix, dry
- 2/3 cup vegetable oil
- 1/4 cup vinegar
Instructions
- In large bowl, toss together broccoli, cauliflower, tomatoes, onions and olives.
- In small bowl, whisk together dressing mix, oil and vinegar.
- Pour dressing over salad and stir gently to combine.
- Refrigerate at least 3 hours before serving.
