    Colorful Vegetable Salad

    Recipe Introduction


    Serves a crowd. Can be refrigerated for several days if onions are removed.


    List of Ingredients


    • 6 cups broccoli florets
    • 6 cups cauliflower florets
    • 2 cups cherry tomatoes, halved
    • 1 large red onion, thinly sliced
    • 1 6 ounce can pitted ripe olives, drained and sliced
    • 1 envelope ranch-style dressing mix, dry
    • 2/3 cup vegetable oil
    • 1/4 cup vinegar


    Instructions


    1. In large bowl, toss together broccoli, cauliflower, tomatoes, onions and olives.
    2. In small bowl, whisk together dressing mix, oil and vinegar.
    3. Pour dressing over salad and stir gently to combine.
    4. Refrigerate at least 3 hours before serving.
