Fettuccini with Mushrooms

Recipe Introduction
Especially good with a variety of mushrooms but works with common button mushrooms too.
List of Ingredients
- 1 pound crimini mushrooms, sliced
- 2 each shitake mushrooms, sliced
- 1 large portobello mushroom, sliced
- 2 cloves garlic, crushed
- 1/4 c. olive oil
- 2 Tbs. pesto sauce
- 1 cup milk ( low fat or fat free O.K. )
- 2 Tbs. cream cheese
- 3/4 pound fettuccini
Instructions
- Cook fettuccini according to package instructions. Drain and keep warm while preparing sauce.
- Saute mushrooms and garlic in olive oil over low heat until tender.
- Mix in pesto, milk and cream cheese. Bring to a slow boil over medium heat, stirring constantly.
- Reduce heat and simmer, stirring often, while cream cheese melts and sauce thickens.
- Pour sauce over pasta and toss to coat. Serve immediately.
