    Fettuccini with Mushrooms

    Especially good with a variety of mushrooms but works with common button mushrooms too.


    List of Ingredients


    • 1 pound crimini mushrooms, sliced
    • 2 each shitake mushrooms, sliced
    • 1 large portobello mushroom, sliced
    • 2 cloves garlic, crushed
    • 1/4 c. olive oil
    • 2 Tbs. pesto sauce
    • 1 cup milk ( low fat or fat free O.K. )
    • 2 Tbs. cream cheese
    • 3/4 pound fettuccini


    Instructions


    1. Cook fettuccini according to package instructions. Drain and keep warm while preparing sauce.
    2. Saute mushrooms and garlic in olive oil over low heat until tender.
    3. Mix in pesto, milk and cream cheese. Bring to a slow boil over medium heat, stirring constantly.
    4. Reduce heat and simmer, stirring often, while cream cheese melts and sauce thickens.
    5. Pour sauce over pasta and toss to coat. Serve immediately.
