    Onion, Mushroom and Spinach Saute

    Recipe Introduction

    I made this with the original recipe but it barely made enough for 1 person, so I adjusted the amount of spinach to make enough for 2. Very tasty and my new favorite! Cookin-jo's Note: Getting more spinach into our diet is something I've been working on lately, but not everyone likes just plain spinach.

    List of Ingredients

    • 1 teaspoon olive oil
    • 1 medium onion , sliced thinly lengthwise (any kind of onion you like)
    • 4 ounces mushrooms , sliced
    • 1 tablespoon garlic , minced
    • 8 cups spinach leaves , loosely packed (Will reduce down significantly)
    • ¼-½ teaspoon balsamic vinegar , to taste
    • salt and pepper , to taste

    Recipe

    Directions
    1. Preheat a medium sauté pan on medium heat.
    2. Add olive oil.
    3. Add onions and mushrooms, stirring for 5-10 minutes, until golden brown, adding garlic halfway through.
    4. Add spinach and stir a minute or two, until spinach is just wilted.
    5. Remove from heat and add balsamic vinegar, salt and pepper to taste.
