    List of Ingredients




    4 cups unsifted all-purpose flour, lightly spooned into the cup
    1 tbsp sugar
    1 tsp salt
    1 ¾ cup solid vegetable shortening (not oil, lard, margarine, or butter)
    ½ cup water
    1 tbsp lemon juice
    1 large egg

    Recipe



    Put in large bowl and mix well with table fork:
    flour, sugar, salt

    Add shortening and mix until ingredients are crumbly.

    In small bowl, beat together with fork water, lemon juice, and egg.

    Combine the two mixtures, stirring with fork (or in stand mixer) until all ingredients are moistened.

    Divide dough into 5 portions and with hands, shape each portion into a flat round patty ready for rolling.

    Wrap each in plastic or waxed paper (or sandwich bag) and chill at least ½ hour. It may be frozen. To roll, lightly flour both sides of patty, pastry cloth, and rolling pin with stockinet.
