    Rum Cake

    Recipe Introduction

    Cornelia Harbison. Since my first recollection of this cake was from Baton Rouge, perhaps she was a friend there. It's quite strong, by the way.

    List of Ingredients

    Cake:
    1 pkg yellow cake mix
    1 pkg instant vanilla pudding
    4 eggs
    1/2 cup oil
    1/2 cup light brown sugar
    1/2 cup cold water
    1/2 cup light rum
    Sauce:
    1 cup sugar
    1/2 cup butter
    1/4 cup water

    Recipe

    Mix cake ingredients a full 10 minutes. Sprinkle chopped nuts in bottom of greased tube pan before pouring batter into pan. Bake one hour at 325.
    Make sauce:
    Bring to boil one minute and remove from fire. After it cools slightly, add 1/4 cup light rum. Pour over cake while still warm & leave in pan to cool.
