7 1/2 oz package pitted dates, chopped
1 cup water
1 cup sugar
1 cup shortening
2 cups brown sugar
2 eggs
4 cups sifted flour
1/2 tsp baking soda
1/2 tsp salt
Recipe
Filling: combine dates, water, sugar, and cook until thick. Stir in pecans and cool mixture.
Cookie: Cream shortening and sugar; add eggs and vanilla, beating in well. Add remaining dry ingredients.
Chill and divide into two rolls and roll between two pieces of wax paper 1/4 inch thick. Spread one-half date mixture on each and roll up. Wrap in wax paper, chill. Slice 1/4 inch thick and bake 12-15 minutes at 375 degrees.
6 dozen cookies.
