List of Ingredients
1 lb lobster, cooked 1 cup milk
6 tbsp butter 1 cup whipping cream
1/3 cup flour 3 egg yolks
1 ½ tsp salt ½ cup dry sherry
¼ tsp cayenne 1 lb scallops, cooked
¼ tsp nutmeg 1 lb shrimp, cooked
6 cups hot cooked rice
Recipe
Remove meat from lobster and cut to bite-size. Melt butter in saucepan, stir in flour, salt, cayenne, and nutmeg. Cook stirring until bubbly. Stir in milk and cream and cook stirring until thickens and bubbles ( 1 minute). Beat egg yolks slightly, stir in sherry. Slowly stir into ½ cup of sauce, then stir back into remaining sauce. Cook slowly stirring for one minute. Fold in scallops, shrimp and lobster. Heat 5 minutes. Serve over hot rice.
