4 oz. chili powder
White vinegar
3 lbs. ground beef, fine
1 lb. ground pork, fine
2 tbsp. oregano
2 tsp. ground cumin
5 cloves garlic, finely minced
1/2 tsp. black pepper
2 tsp. salt
Recipe
Moisten chili powder with enough white vinegar to make a thick paste. Combine beef and pork and mix all other ingredients as well. Let mixture stand in a covered glass or ceramic bowl overnight. Pour off accumulated liquid.
Either stuff into casings, or crumble and use in recipes.
