    Salted Peanut Chews

    List of Ingredients




    Crust:
    1 1/2 cup flour
    2/3 cup packed brown sugar
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1/2 cup margerine (or butter)
    1/4 teaspoon baking soda
    1 teaspoon vanilla
    2 egg yolks
    3 cups mini-marshmallows

    Topping:
    2/3 c. light corn syrup
    1/4 cup margerine (or butter)
    2 teaspoon vanilla
    2 cups (12 oz.) peanut butter chips
    2 c. rice cereal
    2 cups peanuts ( I prefer cocktail peanuts)

    Recipe



    Heat oven to 350 degrees.

    In large bowl combine all crust ingrediants except marshmallows, until crumb mixture forms. Press into bottom of ungreased 13 x 9 pan. Bake for 12 to 15 minutes, or until light brown. Immediately sprinkle with marshmallows. Return to oven for 1 - 2 minutes or until marshmallows just begin to puff. Cool while preparing topping.

    Topping:
    In large pan, heat corn syrup, margerine, vanilla and chips just til chips are melted and mix is smooth, stirring constantly. Remove from heat. Stir in cereal and nuts. Immediately spoon warm topping over marshmallow and spread to cover.

    Chill. Cut into bars.

    (I have cooked the topping mixture in the microwave. However, I have not written down the exact minutes. I believe it to be around 5 minutes, until chips melt. You may want to work in 2 minute intervals.)
