Chocolate Thumbprints
List of Ingredients
1 c. softened margarine
1 teaspoon salt
1 egg
1 c. sugar
2 - 1 oz. squares unsweetened chocolate, melted and cooled.
2 1/2 c. flour
Filling:
1/4 c. softened margarine
2 c. powdered sugar
3 - 4 teaspoons milk
1/2 tsp. vanilla
red or green food coloring
1/4 c. crushed peppermint candyRecipe
In large bowl, combinemargaring & sugar; beat til creamy. Add vanilla, salt, chocolate and egg; mix well. Lightly spoon flour into measuring cup; level off. Gradually add flour to creamed mixture; mix well. Chill dough 30 minutes for easier handling.
Heat oven to 375 degree.
Shape dough into 1" balls; place 2" apart on cookie sheets. With thumb, make imprint in center of each cookie. Bake at 375 for 8 - 10 minutes. Cool
Filling:
Combine softened margarine, powdered sugar, milk and vanilla. Divide into 2 bowls. Add red food coloring to one bowl and green to the other. Mix well. If necessary, then with additional milk. Fill each cookie with about 1/2 teaspoon filling. Sprinkle with peppermint candy.
Makes about 6 dozen.
