Slightly Sourdough Pancakes
1 cup all-purpose flour
2 Tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
3 eggs
2/3 cup plain yogurt (not low-fat)
1 cup milk
1/4 cup margarine or butter, melted
In a small bowl, combine flour, sugar, baking powder, salt and cinnamon.
In a medium bowl, beat eggs and then stir in yogurt and milk. Beat until smooth.
Pour dry ingredients into wet ingredients and stir until blended. Let stand 20 minutes.
Halfway through standing time, preheat electric fry pan or griddle to 375 degree. Melt margarine/butter.
With 5 minutes of standing time to go, slowly drizzle the margarine into batter while stirring. Stir gently until blended.
Grease the griddle with about a tablespoon of margarine (less for fry pans). Pour batter by quarter cupfuls on to hot griddle. When bubbles form and edges appear dry, flip the pancakes and cook until golden. No need to grease the pan between batches.
Serve with your favourite syrup or warm fruit sauce.
Makes 16 to 20 pancakes.
