Spicy Buttermilk Pancakes
2 cups all-purpose flour
2 Tbsp. sugar
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
1 large egg
2 cups buttermilk
3 Tbsp. vegetable oil
3 Tbsp. water
1 Tbsp. grated orange rind
In a large bowl, combine flour, sugar, salt and spices. Set aside.
In a small bowl, beat egg until smooth. Mix in buttermilk, oil, water and orange rind.
Make a well in centre of flour mixture. Add buttermilk mixture all at once and stir just until moistened.
If batter is too thick, add water (1 Tbsp. at a time). Let stand 10 minutes.
Meanwhile, heat griddle or electric fry pan to 375 degrees. Grease griddle/pan with a bit of margarine. Fry 1/4 cup of batter per pancake. When bubbles form and edges appear dry, flip to brown the other side. No need to grease between batches.
Makes about 14 very filling pancakes.
