Auntie Jo's Cheesecake
List of Ingredients
CRUST:
2-1/4 cups graham cracker crumbs
1 Tbsp. sugar
1 tsp. cinnamon
1/2 cup margarine melted
FILLING:
1 package (large size or 2 small size) lemon, lime or orange flavoured JELL-O
1 cup boiling water
1 package (8oz./250 gr.) cream cheese, softened
2 Tbsp. lemon, lime or orange juice
1 large can 13 oz. evapourated milk
1 cup sugar
Recipe
Place the ca of evapourated milk in the freezer for 30-45 minutes.
Preheat oven to 350 degrees.
CRUST: In a small bowl combine cracker crumbs, sugar, cinnamon and melted margarine. Stir until well coated. Press into 9x13" pan. Bake for 5 minutes. Cool.
FILLING: Cut cream cheese into small pieces.
In a medium bowl, combine JELL-O powder and boiling water. Stir until dissolved.
Add cream cheese and whisk vigorously until cheese is melted into gelatin mixture. There may be some very small bits that won't dissolve; that's OK.
Add juice to gelatin mixture. Stir to blend.
Take evaporated milk from freezer and pour into large mixing bowl. Gradually add in sugar while beating at medium-high speed with electric mixer until mixture doubles in size.
Gently and gradually (about 1/4 to 1/2 cup at a time), fold in gelatin mixture into whipped milk mixture until no streaks appear.
Pour gently over crust and chill for at least 4 hours or until set.
Garnish with fruit or additional cracker crumbs.
