    Oven Chicken Fingers

    2 cloves garlic, minced
    1/4 cup vegetable or olive oil
    1 cup dry bread crumbs
    1/4 cup corn flake crumbs
    2 Tbsp. freshly grated Parmesan cheese
    1 tsp. dried basil leaves
    6 boneless, skinless chicken breast

    In a small bowl, combine garlic with oil. Let stand at room temperature for about half an hour.

    Preheat oven to 425 degrees.
    Lightly grease a large baking sheet.

    On a pie plate combine bread crumbs, corn flake crumbs, basil and Parmesan cheese. Set aside.

    Cut chicken into 1" strips. Put in medium bowl; pour oil over meat and stir to coat. Can be made to this point and put in refrigerator for and hour or so.

    Coat oiled chicken pieces with crumb mixture. Place on prepared sheets. Spray lightly with cooking spay.

    Bake for 20 minutes. Broiling the chicken may be required to brown the tops of the pieces.

    Serves 6
