    Oven Fried Chicken Breasts

    Source of Recipe

    my own

    List of Ingredients

3 large skinless, boneless chicken breasts
3 to 4 Tbsp. olive oil
    1 large egg
    1/4 cup dry bread crumbs
    1/4 cup all-purpose flour
    2 tsp. chili powder
    1/2 tsp. garlic powder
    1/2 tsp. dried basil
    1/4 tsp. sea salt

    Recipe

    Pre-heat oven to 375 degrees.

Pour enough oil into a 7-1/2 x 11-1/2" glass baking dish to just thinly cover the bottom. Smear oil around with a pastry brush or your fingers.

In a cereal bowl, beat egg until well combined.

In a pie plate, combine bread crumbs, flour, chili powder, basil, garlic powder and salt. Stir with a fork until well combined.

Dip each chicken breast in egg and then in crumb mixture to coat well.

Place chicken breast with what would be skin side down, into dish. Gently turn over so that top will be coated with oil. It is important to allow the oil to fill back in so you don't place the meat on the bare dish. Dab, with your fingers, any crumb mixture that did not get coated with oil, using the oil from the bottom of the pan.

Once all chicken pieces are done, sprinkle a light layer of additional crumb mixture on top of each chicken piece making sure that it gets absorbed by the oil already on the meat. Again, if some crumb mixture doesn't get absorbed into the oil, just dab it with some oil from the bottom of the dish.

    Bake for 35 minutes.

NOTE: for added zip, you could put a 1/4 tsp. white pepper into the crumb mixture or sprinkle prepared chicken pieces with some freshly grated Parmesan cheese, before baking.
