Apple Walnut Raisin Bread
List of Ingredients
2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 cup margarine, softened
3/4 cup sugar
1 egg
1/2 cup buttermilk
1/4 cup apple juice
2 large baking apples, do not peel
(Granny Smith are best)
1/2 cup raisins, softened
1/2 cup chopped walnuts
Recipe
Preheat oven to 350 degrees.
Grease and flour a 9x5" loaf pan.
To soften raisins, cover with hot water and let sit about 10 minutes. Drain well.
In a small bowl, combine flour, baking powder, soda, cinnamon, nutmeg and salt; set aside.
In a large bowl, cream margarine and sugar together until light and fluffy. Add egg, buttermilk and apple juice; beat well.
In another small bowl, combine raisins and walnuts. Grate apples to measure 1 cup and combine with raisins and walnuts. Stir in about 1/4 cup of the flour mixture. Combine all mixtures in the large bowl; stirring just until moistened.
Pour batter into prepared pan and bake for 1 hour or until toothpick inserted in bread, comes out clean. Test middle and ends. Let cool in pan for 10 minutes. Remove to a wire rack to cool completely.
Wrap well and refrigerate overnight.
