Harvest Muffins
List of Ingredients
2-1/2 cups all-purpose flour
1-1/2 cups sugar
1 Tbsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 eggs, lightly beaten
1/2 cup vegetable oil
2 cups finely chopped, peeled apples
1 cup shredded carrots
1 cup whole cranberries
1 cup chpped walnuts or pecans Recipe
Preheat oven to 375 degrees.
Place paper liners in muffin cups.
In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt.
In a small bowl mix eggs an oil. Add apples and carrots; stir into dry ingredients just until moistened.
Batter will be VERY THICK.
Fold in cranberries and nuts.
Fill muffin cups 2/3 full.
Bake for 20 to 25 minutes or until muffins test done.
NOTE: these muffins are best if served the same da they are made.
