Pizza Crust
1 package dry yeast
1 tsp. sugar
1/2 cup water
1/2 cup milk
3 cups all-purpose flour (divided, 2 plus 1)
1/2 tsp. salt
4 Tbsp. olive oil
Combine milk and water in small saucepan. Heat just until lukewarm. Transfer to a small bowl.
Add yeast and sugar; stirring until dissolved.
Stir in 2 cups of flour. Let stand 10 to 15 minutes until bubbly.
In a large bowl, combine remaining 1 cup of flour and salt. Make a well in the centre of flour; add oil and yeast mixture. Stir by hand to form a firm dough.
Turn onto a floured surface and knead for 15 minutes, until dough is smooth and elastic. Place in a lightly oiled bowl. Turn once to coat. Cover with plastic wrap and tea towel. Let stand in a warm place until doubled in size (about 30 minutes).
Punch dough down. Turn onto counter; cover with bowl. Let rest 10 to 15 minutes. This step is important. It helps the dough relax so that it won't spring back when you try to roll it out.
Flatten dough by hand onto lightly floured surface and shape with rolling pin. Lightly oil pan. Set dough on pan. Let rise 15 to 30 minutes or until doubled in size.
Lightly brush dough with oil where you will spread the sauce. Spread on about 1 cup of sauce (or amount desired) within an inch of the edge.
Mix together 2 cups grated Mozarella cheese and 1 cup grated sharp cheddar cheese. Cover sauce with 2 cups of the blended cheese, then place desired toppings over cheese. Cover toppings with remaining cup of blended cheese
Bake in a preheated oven of 400 degrees for about 15 minutes or until crust is done and cheese is melted.
Makes 1 large pizza or two pizzas on small cookie sheets . Serves 8 to 10.
