Brocolli Salad
2 bunches brocolli, finely chopped
10 strips bacon, crisply cooked and crumbled
4 Tbsp. toasted sunflower seeds, unsalted
1/2 cup raisins
3/4 of a medium red onion, finely diced
1/4 cup Orzo pasta, cooked, drained and cooled
DRESSING:
1 cup non-fat yogurt or sour cream
1 Tbsp. vinegar
1/2 tsp. dry mustard
pinch of black pepper
pinch of celery seed
In a medium bowl, combine brocolli, bacon, sunflower seeds, raisins and onion. Cover and refrigerate until serving time.
In a small bowl, stir together all dressing ingredients until well combined. Cover and refrigerate until serving time.
If you don't have time to make your own dressing or not inclined to do so, Kraft's Roasted Garlic Caesar dressing is really wonderful on this salad. One bottle is sufficient if you like just a thin coating of dressing.
Serves 10
DO NOT BLEND SALAD INGREDIENTS WITH DRESSING UNTIL JUST BEFORE SERVING. This is to keep the bacon and seeds crisp.
