1/4 cup finely diced onion
4 Tbsps. finely diced celery
2 cans (14 oz. each) diced tomatoes
1/2 tsp. dried basil leaves
1/2 tsp. salt
1/4 tsp. dried oregano leaves
1/4 tsp. coarse ground black pepper
1 to 1-1/2 cups waterRecipe
In a medium sized sauce pan, saute onion and celery in a bit of oil, over medium heat, for a couple of minutes.
Stir in tomatoes, basil, salt, oregano and pepper.
Heat through for about 3 minutes. Cool for 10 minutes.
Spoon 1/3 of the tomato mixture into a small food processor. Pulse 6 times. Pour into a medium sized bowl. Repeat with the remaining 2/3 of mixture.
When complete; stir in 3/4 cup of the water. Add up to another 3/4 cup to reach desired consistency.
Chill for about 5 hours to allow flavours to blend.
When ready to serve, heat through over medium heat.
Makes 4 servings.
