    Golden Mashed Potatoes

    5 large Yukon Gold potatoes, peeled and chopped
    1 medium onion, peeled, quartered and sliced
    4 Tbsp. butter
    1/2 tsp. sea salt
    1/2 tsp. chili powder
    1/4 tsp. course ground black pepper
    1/4 tsp. garlic powder
    1/4 to 1/2 cup warm milk

    Cook potatoes in water until tender.

    While potatoes are cooking, saute onions in a bit of oil and butter over MEDIUM heat until browned. Stir almost constantly. This will take some time so be patient and resist the urge to turn up the heat or the onions will burn rather than brown. Place in a bowl and set aside.

    When potatoes are tender, set burner to minimum heat and drain potatoes. Return to burner to allow potatoes to dry for a couple of minutes.

    Remove from heat; mash potatoes. Add butter and mash again.

    Stir in 1/4 cup milk and spices. Stir in onions.

    Serve warm.

    NOTE: if you want a creamier consistency, just add a bit more milk. These are great as leftovers, shaped into a patty and browned well on both sides in a fry pan.

    Serves 4.
