Roasted Asparagus Spears

2 thin bunches of fresh asparagus spears; endes trimmed
2 tbsp. Extra Virgin Olive Oil, plus more for serving
1 tsp. coarse salt
1/2 tsp. fresh ground pepperRecipe
Preheat oven to 425 degrees. Spread out asparagus spears in large shallow roasting pan. Drizzle with olive oil; sprinkle with salt and pepper. Shake roasting pan gently to coat asparagus with oil. Roast in oven until spears are tender. Cooking time will depend on thickness of spears, about 10 minutes for medium-thick. Pencil thin will take much less time. Shake pan halfway through cooking to prevent sticking. Just before serving drizzle asparagus with olive oil.
