Melissa's Ham and Beans

Adaptions of my own made from my mother's verbal instructions and Nick's preferences
Recipe Introduction
This is a very simple recipe that is hard to mess up. Substitutions can be easily made and adjusted due to personal preference.
List of Ingredients
- 1 lb. bacon, chopped
- 2 meaty ham hocks
- 1-2 lbs. beans, any variety or mixed
- 1 onion, chopped
- 1-2 bay leaves
- 6 cloves garlic, minced
- water to cover with proportional amount of ham boullion
- cold water with cornstarch to thicken, if desired
Instructions
- Cut bacon in bite sized pieces and brown/crisp in a dutch oven.
- Place half the onion in the bacon grease to cook.
- Once bacon is crisp drain grease.
- Use broth water to deglaze pan.
- Add rest of ingredients.
- Simmer on med-low heat for 4-5 hours, adding additional water if needed.
- If cornstarch has not thickened enough add more cornstarch with water and cook OR When beans are cooked through take a few cups of beans/broth and mash to a paste. Return paste to pot to thicken.
- Serve.
- Excellent additions include a nice crusty bread or cornbread.
Final Comments
I use a jar of minced garlic and dried minced onion as a substitute for fresh ingredients.
