    List of Ingredients




    Potatoes
    Onion 1 sliced
    Celery to taste
    Parsley 1/8 cup
    Half and Half
    2 Tbl sp Flour
    Butter

    Recipe



    Chunk and boil potatoes, meanwhile in a sauce pan combine the chopped onion, celery, and parsley and sautee in butter on low heat until onions turn clear.

    When potatoes are done drain off 2/3rds of the water and mash slightly with a potatoe masher.

    Add 2 Tbl spoons of flour to the onions, celery and parsley and remove from heat.

    Pour in half and half until potatoes are just covered, add onions, celery, and parsley to potatoes.

    Simmer on low untill ready to eat.


    Half and half can be subsituted with some milk but do not leave as much water if using milk.
