    Nothing beats hot frech bread dipped in fresh pesto... I grow my own basil for the freshest taste. Also, Pesto can be tossed into hot pasta for a quick and yummy meal. Pine Nuts can be expensive, so I've used the walnuts before, too. There is a slight difference in flavor.. I prefer the pine nuts, but the walnuts are good, too.

    List of Ingredients




    3 oz. parmesan cheese
    2 oz. pine nuts or walnuts
    2 garlic cloves
    1 oz.. basil sprigs (fresh, NOT dried)
    6 oz.. virgin olive oil

    Recipe



    Place parmesan, pine nuts, and garlic into food processor. Process mixture until until well crumbled. Add the basil and continue processing until the herb is chopped and the mixture begins to clump together into a coarse, bright green paste.

    Add a little of the olive oil and process the mixture until it is incorporated, then gradually trickle in the remaining olive oil to make a medium consistancy paste.

    Toss with pasta, or spread on hot french bread (my personal favorite).
