    List of Ingredients




    MERRI'S ANGEL COOKIES

    3/4 cup oil
    1/2 cup brown sugar
    1/2 cup white sugar
    1 egg
    1 cup coconut
    1/4 teaspoon salt
    1 cup sweet white rice flour
    1/2 cup soya flour
    1/2 cup potato starch
    1 teaspoon baking soda
    1 teaspoon cream of tartar
    1 teaspoon lemon extract

    Recipe



    Preheat oven to 350 degrees F. Grease cookie sheets.
    Beat oil, sugars, lemon extract and egg until thick and fluffy. Whisk flours/starch, salt, baking soda and cream of tartar until blended and no lumps are present. Beat flour/starch mixture into oil mixture until blended. Stir in coconut. Roll in balls and press with fork. Bake for 8-10 minutes or until golden brown.
    These cookies will never make it to the freezer!
