    Tofu Mexican Vegetable Dip

    People who are dairy intolerant, or women who want to eat as much tofu as possible, will enjoy this. Obviously, you can adapt it to your own tastes.


    List of Ingredients


    • 1 can ( 10.5 oz.) refried beans or similar bean dip
    • 1/4-1/2 C salsa
    • 1 package (14 oz) soft custard style tofu
    • 1 very large avocado, mashed
    • 1 T fresh lemon juice
    • 1/4 tsp (dash) of hot sauce
    • 1/2 tsp salt
    • 1/4 C sliced green onion
    • 1 small can (2 oz) chopped olives
    • 1 large fresh tomato, diced
    • veggies and chips for dipping


    Instructions


    1. Drain tofu on paper towels. Crumble and combine with avocado, lemon juice, hot sauce, salt in food processor or blender.
    2. In a pie dish, layer ingredients. Spread bean puree, salsa, tofu-avocado, green onions, olives, tomato.
    3. Serve with chips or vegetables such as cucumbers, carrots, green peppers, zucchini.
