Mix cinnimon and sugar. Sprinkle half on work surface.Place pastry on mixture and roll to a 12"square.Sprinkle with1/2 remaining mixture.
Lightly score a line down center of pastry. Fold right side to center and repeat with left side. Sprinkle with last of sugar mix.Fold left side over right to form a thin rectangle.
Cut crosswise into 1/3" slices. Place cut side up on baking sheet. Freeze 10 min. (or up to 2 days covered). Heat oven to 400 degrees.
Bake 10 min.,turn over and bake 5 min. longer. Cool on rack.
