    • 3 eggs
    • 2/3 cup pumpkin
    • 1 cup sugar
    • 2 tsp pumpkin spice
    • 1 cup chopped pecans
    • 1 tsp lemon juice
    • 3/4 cup flour(plain)
    • 1 tsp baking powder
    • 1/2 tsp salt
    • 1 box powdered sugar


    Instructions


    1. Bake at 350 degrees. In jellyroll pan (15x10x4) for 15x10x4)for 15 minutes. Grease and flour pan. In separate bowl combines flour, baking powder, pumpkin spice and salt. Set aside. Beat eggs at high speed for 5 minutes. Gradually beat in sugar, stir in pumpkin and lemon juice. Then gradually fold in dry ingredients into batter. Pour into pan and sprinkle with pecans. Bake. Turn out onto a towel sprinkled with confectioner's sugar, starting at the narrowed end roll towel and cake together let it set until warm. Then unroll and cool another 20 minutes.
