Lasagna for two

List of Ingredients
- 5 lasagna noodles
- 1/2 lb ground beef
- 1/4 cup each green pepper, onion and mushrooms
- 1 jar (14oz) spaghetti sauce
- 1 egg beaten
- 3/4 cup ricotta cheese
- 2 tbsp grated parmesan cheese
- 2 tbsp parsley
- 1 1/2 tsp italian seasoning
- 1 cup shredded mozzarella cheese
Instructions
- Cook noodles. Cook beff and veggies over medium heat until meat is done. Drain, then stir in sauce and cook over low heat 5 minutes. In small bowl, combine egg, ricotta, parmesan, parsley and seasoning. Drain noodles. Spread 1/4 meat sauce in a greased loaf pan (trim noodles to fit)place two noodles over meat sauce. Layer with a third of the cheese mixture, a third meat mixture and a third mozzarella cheese. Repeat layers twice using noodle trimmmings on top layer. Bake 350 degrees and 30- 35 minutes.
