Grandma Welch's Sugar Cookies with Icing
Granma's Sugar Cut-outs
1 cup lard (use 1/2 butter or margerine)
2 cups sugar
4 eggs
1 ts. vanilla
1/2 ts. almond flavor
1/2 ts. lemon flavor
2 TBLS. milk
4 cups flour
4 ts. baking powder
1/2 ts. salt
cream shortening, butter, eggs, and sugar; add milk and flavorings. Mix flour, baking powder and salt together in measuring cup and add while mixing. Dough will be very soft.Chill dough, (I do mine in small batches wrapped in plastic in the freezer),-roll on lightly floured board. The dough feels soft yet is quite handle-able. Use cutters and bake for 10 minutes at 350. They will get lightly golden. Cool and frost and decorate.
This is the frosting I use, it is traditional to build gingerbread and dries very hard, and crisp. I think it helps keep the cookies soft.
3 egg whites
1 lb. powdered sugar
1 ts. cream of tartar
1 ts. vanilla
beat all together, beat 7-10 minutes. cover with wet paper towel to prevent drying.
