    Mom's Apple Cake

    This cake gets better the longer it sits,it gets moister every day, it is so full of goodies that it doesn't require a frosting of any kind, great for travelling or picnics, and it keeps well.Mom has had this recipe for years and she is always asked for it.

    3 cups coursely chopped apples
    3 cups flour
    1 ts.baking soda
    2 ts cinnamon
    2 cups sugar
    2 eggs
    1-1/4 cup veg. oil
    1 cup plumped raisins(directions below)
    1 cup nuts (optional)
    2 Tbls. vanilla

    Mix eggs and sugar; add oil and spices and flour, then the apples, and raisins, and nuts if desired. Mix well, the batter will be very thick, almost hard to mix....spread into a greased and floured, 9x13x2 cake pan and bake at 350 for 1-1-1/4 hours, or until the cake tests done.

    *** to plump the raisins bring raisins and a small amount of water to a boil on the stove, drain and let cool.
