Rice Mix Meatballs
1 pkg. beef flavored rice mix(6.8oz. like rice-a-roni)
1 egg beaten
1 pound ground beef
2-1/2 cups boiling water
2 TBLS. cornstarch
3 TBLS. cold water
In a bowl combine the meat, egg and rice mix, reserving the seasoning packet,until well blended. Form mixture into 1 inch balls, brown in a large skillet, on all sides. Add water and seasoning packet to skillet and bring to a boil, simmer covered for about 20 minutes or until rice is tender. Combine the cornstarch and cold water until smooth, add to skillet. Bring to a boil. Cook and stir for about 2 minutes or until thickened. Serve with potatoes.
