Lasagne
This is the one meal we never had growing up, Mom never made it but I always loved it, so when I grew up it was one of the first recipes that I invented. Now Mom loves it when I fix it, as I always take some to her house.It is not "original" I am sure but I did come up with it all by myself after much trial and error. Hope you enjoy it as much as we do..
2 lbs. hamburger
1 onion diced
2-3 cloves garlic
4-5 TBLS olive oil
2-15 oz. cans tomato sauce
1-15 oz can tomatoes, diced
2 small cans mushrooms, or 1/2 pound fresh, chopped
1 small zuchini, in a small dice with peel left on
2-1/2 pounds mozzerella cheese, shredded
1/4-1/3 cup parmesan cheese
12 oz. cottage cheese, drained and rinsed with cold water
2 large eggs
3 Tbls. italian seasoning blend, divided
1 pound box lasagne noodles
salt and pepper to taste
Brown hamburger and onion together, crumbling; when done, drain grease off....return to pan add olive oil and garlic, heat just for a minute, don't want your garlic to get bitter, add fresh mushrooms and zuchini, cook for a minute or two;add tomato sauce and diced tomatoes, and 2-1/2 TBLS Italian seasoning blend and salt and pepper;( add canned mushrooms at this point)Let simmer. Drain cottage cheese in a colander, and run cold water over it, and drain again; add two slightly beaten eggs and parmesan cheese, and about 1/2 a TBLS Italian seasoning; set mixture aside. Bring water to a boil and add noodles, you will need approx. 15 noodles.(this allows for breakage and sticking).when noodles are just starting to soften (about 4-5 minutes after they return to boil) remove from heat and run under cold water, use your hands to seperate noodles and straighten;Now it time to assemble;
Using a well greased 9x13x2 pan, start with noodles, lay three to four noodles across the pan, spread a nice thick layer of sauce over them, crumble your cottage cheese mixture over the top, using half of it, then a nice thick layer of cheese; repeat layers until you have three. Your top layer, the third set of noodles will be just noodles sauce and cheese. Bake in a 375 oven for about 45 minutes or until it is bubbly and nicely browned.( You may want to put some foil under the rack in the oven to prevent a messy oven floor) Let stand for 15 minutes before cutting, this is very important, it will not cut if you don't let it stand. Serve with garlic bread and a nice green salad. This is a large recipe and will serve between 8 and 10.
