Romaldo's Carnitas
I have used this chuckwagon recipe for many years. It is a good recipe, and it freezes well.
List of Ingredients
3-4lb. chuck roast
1 can green chiles, chopped
2T chile powder
1/2t oregano
1/2t ground cumin
2 cloves garlic, minced
salt to taste
Recipe
Place roast on heavy duty foil. Combine all the rest of the ingredients, and spread on top of the roast. Seal foil securely and place in roasting pan. Bake at 300 degrees F.for 3-12 to 4 hours (meat should be so tender it falls apart). Use 2 forks and shred roast.
For each serving, spoon meat on a hot flour tortilla.Serve with guacamole and salsa.
