    Chicken Noodles with Lime and Ginger

    2 boneless chicken breasts, finely sliced
    1 garlic clove, crushed
    1 inch cube ginger, chopped
    l/2 tbsp brown sugar
    l/2 tbsp soy sauce
    l/2 tbsp hoisin sauce
    l/2 tbsp sesame oil
    1 small onion, finely chopped
    1/2 red pepper, finely sliced
    Handful of snowpeas
    4 mushrooms, sliced
    Juice and zest of 1 lime
    10 ounces medium noodles
    2 tbsp fresh coriander, chopped

    Recipe



    Mix together all the liquid ingredients, along with the garlic, ginger and lime zest to form a marinade. Mix in the chicken and leave for at least 1 hour.

    Remove the chicken with a slotted spoon and retain the marinade.

    Cook the noodles in boiling water as directed on the packet. Drain the noodles and set aside.

    Heat the wok and add a little oil. Fry the chicken for approximately 3 minutes or until it has all changed color.

    Add the vegetables and stir fry for 3 minutes. Add the cooked noodles and fry for a further 1 minute.

    Pour in the marinade and bring to the boil. Simmer for 1 minute, stirring constantly.

    Stir in the coriander leaves and serve in deep bowls.
