List of Ingredients
Water, Cocoa, Shortening, Sugar, Eggs, Vanilla, All-Purpose Flour, Baking Soda, Baking Powder, Salt, Buttermilk or Sour Milk (see bottom of recipe for homemade sour milk)Recipe
Preheat Oven to 350F.
In a small bowl, pour
1/2 c. boiling water
over
1/2 c. cocoa (unsweetened)
Blend and allow to cool.
In a large bowl, cream
2/3 c. shortening (regular, not butter)
and then add
1 1/2 c. sugar (granulated)
and beat until light and fluffy. Add
3 eggs
1 tsp vanilla (real)
and beat well.
In a seperate bowl blend
2 1/4 c. All-Purpose Flour (bleached or unbleached)
3/4 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
together.
Alternately add the dry ingredients and
3/4 c. buttermilk (see below)
to the shortening/sugar mixture stirring just enough to combine them. Gently blend in the cooled cocoa and water.
Bake in a greased, 9 x 11 in. baking pan for 40 to 50 min. I used a "theme" cake pan (Thomas or Pooh) and it worked just fine. I also use canola oil to grease the pan. It works much better than anything else I've ever used.
Let set 10 min. Cake is delicious warm with just a sprinkling of powdered sugar. Or you can cool it and ice it as is traditionally done.

Buttermilk/sour milk recipe.
If you don't have buttermilk on hand it is simple enough to make sour milk yourself. You most likely will have the two ingredients I prefer, lemon juice and pasteurized milk.
In a 1 c. measuring cup put
1 tsp. lemon juice
fill the rest of the cup with the milk. Works like a charm and has a great flavor too. There are other recipes for this that include vinegar and even powdered milk, but this is my fave.
